Jams and Jellies - Christmas Jam



INGREDIENTS
  • 1 (8-ounce) jar maraschino cherries
  • 1 (11-ounce) package dried apricots
  • 3 1/2 cups water
  • 6 cups sugar
  • 1 (13-ounce) can pineapple chunks, drained

INSTRUCTIONS
Drain cherries; reserve juice. Combine water, cherry juice, and apricots in a large pot; allow it to stand for one hour. Cook over low heat until tender. Add sugar. Cook, stirring frequently, until thick and clear. Cut cherries into fourths and add to mixture along with pineapple. Cook for five minutes more, stirring frequently.
Pour into pint jars and seal.
Yield: 6 1/2 pints.
