Cookies and Candy - Sweet Potato Cookies



INGREDIENTS
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon nutmeg
  • 1/2 cup butter, softened
  • 1 cup brown sugar, packed
  • 1 egg, slightly beaten
  • 1 cup sweet potatoes, mashed
  • 1 teaspoon vanilla extract
  • 1/2 cup walnuts (optional)

INSTRUCTIONS
Cream butter and sugar. Add egg and vanilla, blending well. Add dry ingredients; mix well. Add sweet potatoes, mixing well.
Drop by rounded teaspoonfuls onto ungreased cookie sheet. Preheat oven 375° and bake for eight to 10 minutes.
Note: Cookies become sticky if stored in an airtight container.
